Ingredients:

  • 1 pound (450 g) broccoli rabe, trimmed and washed
  • 3 tablespoons (45 ml) extra-virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1 teaspoon (5 g) red pepper flakes (adjust to taste)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Juice of ½ lemon (optional)

Instructions:

  1. Trim the stem ends of the broccoli rabe and wash thoroughly. Optionally, blanch in boiling water for 2 minutes to reduce bitterness, then cool in ice water.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add sliced garlic to the skillet and sauté until fragrant and golden (about 1-2 minutes).
  4. Carefully add the broccoli rabe to the skillet, tossing to coat in the oil and garlic.
  5. Sprinkle red pepper flakes, salt, and black pepper over the greens.
  6. Sauté for about 5-7 minutes, stirring occasionally, until tender and vibrant green.
  7. Adjust seasoning as necessary and finish with a squeeze of lemon juice, if desired. Plate immediately and enjoy!
