Ingredients:
- 1 pound (450 g) broccoli rabe, trimmed and washed
- 3 tablespoons (45 ml) extra-virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 teaspoon (5 g) red pepper flakes (adjust to taste)
- Salt, to taste
- Freshly cracked black pepper, to taste
- Juice of ½ lemon (optional)
Instructions:
- Trim the stem ends of the broccoli rabe and wash thoroughly. Optionally, blanch in boiling water for 2 minutes to reduce bitterness, then cool in ice water.
- In a large skillet, heat olive oil over medium heat.
- Add sliced garlic to the skillet and sauté until fragrant and golden (about 1-2 minutes).
- Carefully add the broccoli rabe to the skillet, tossing to coat in the oil and garlic.
- Sprinkle red pepper flakes, salt, and black pepper over the greens.
- Sauté for about 5-7 minutes, stirring occasionally, until tender and vibrant green.
- Adjust seasoning as necessary and finish with a squeeze of lemon juice, if desired. Plate immediately and enjoy!
