  • 2 tablespoons (30ml) olive oil
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped, for serving

Instructions:

  1. Prepare Ingredients: Slice the Italian sausage and set aside. Slice the onion and bell peppers; mince the garlic.
  2. Sauté Sausage: Heat a large skillet over medium heat. Add the sliced sausage and cook until browned and cooked through, about 5-7 minutes. Use a slotted spoon to remove the sausage from the skillet, leaving the drippings.
  3. Cook Vegetables: Add olive oil to the skillet if needed. Sauté the onions until translucent (about 3 minutes). Add the sliced bell peppers and continue cooking until they are softened (about 5-6 minutes). Add garlic, oregano, and red pepper flakes; sauté for an additional minute.
  4. Combine Ingredients: Return the sautéed sausage to the skillet with the peppers. Season with salt and pepper, mixing well to combine flavors. Cook for another 2-3 minutes until everything is heated through.
  5. Serve: Garnish with fresh herbs of choice and serve.
