Ingredients:

  • 1 pound fresh okra, trimmed and cut into ½-inch pieces
  • 2 tablespoons olive oil or coconut oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon yellow curry powder
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped, for garnish
  • Lime wedges, for serving

Instructions:

  1. Wash, trim, and cut the okra. Chop the onion, mince the garlic, and grate the ginger.
  2. In a large skillet, heat the oil over medium heat until shimmering.
  3. Add the onions and cook until translucent, 3-4 minutes. Stir in garlic and ginger, sauté for another 1-2 minutes until fragrant.
  4. Stir in ground cumin, coriander, yellow curry powder, and turmeric. Cook for about 30 seconds to bloom the spices.
  5. Add the chopped okra to the skillet, stirring to coat with spice mixture. Sauté for about 8-10 minutes until the okra is tender but still slightly crisp.
  6. Season with salt and pepper to taste. Remove from heat and garnish with fresh herbs. Serve hot with lime wedges on the side.
