Ingredients:
- 1 pound fresh okra, trimmed and cut into ½-inch pieces
- 2 tablespoons olive oil or coconut oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon yellow curry powder
- ½ teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro or parsley, chopped, for garnish
- Lime wedges, for serving
Instructions:
- Wash, trim, and cut the okra. Chop the onion, mince the garlic, and grate the ginger.
- In a large skillet, heat the oil over medium heat until shimmering.
- Add the onions and cook until translucent, 3-4 minutes. Stir in garlic and ginger, sauté for another 1-2 minutes until fragrant.
- Stir in ground cumin, coriander, yellow curry powder, and turmeric. Cook for about 30 seconds to bloom the spices.
- Add the chopped okra to the skillet, stirring to coat with spice mixture. Sauté for about 8-10 minutes until the okra is tender but still slightly crisp.
- Season with salt and pepper to taste. Remove from heat and garnish with fresh herbs. Serve hot with lime wedges on the side.
