Ingredients:

  • 2 tablespoons (30 g) dried shiitake mushrooms, finely ground
  • 1 tablespoon (15 g) garlic powder
  • 1 tablespoon (15 g) onion powder
  • 1 tablespoon (15 g) sugar (brown or white)
  • 1 teaspoon (5 g) ground ginger
  • 1 teaspoon (5 g) white pepper
  • 1 teaspoon (6 g) sea salt
  • 1 tablespoon (15 ml) soy sauce powder (or equivalent liquid soy sauce)
  • 1 teaspoon (5 g) black sesame seeds
  • 1 teaspoon (5 g) chili flakes (optional)

Instructions:

  1. Gather all ingredients and measuring tools. Use a spice grinder or mortar and pestle to finely grind the dried shiitake mushrooms.
  2. In a small mixing bowl, combine ground shiitake mushrooms, garlic powder, onion powder, sugar, ground ginger, white pepper, and sea salt.
  3. Stir in the soy sauce powder (or add liquid soy sauce later when cooking).
  4. Add black sesame seeds and optional chili flakes, mixing thoroughly.
  5. Transfer the seasoning blend to an airtight container and store in a cool, dark place (up to 6 months).
