- 2 tablespoons (30 g) dried shiitake mushrooms, finely ground
- 1 tablespoon (15 g) garlic powder
- 1 tablespoon (15 g) onion powder
- 1 tablespoon (15 g) sugar (brown or white)
- 1 teaspoon (5 g) ground ginger
- 1 teaspoon (5 g) white pepper
- 1 teaspoon (6 g) sea salt
- 1 tablespoon (15 ml) soy sauce powder (or equivalent liquid soy sauce)
- 1 teaspoon (5 g) black sesame seeds
- 1 teaspoon (5 g) chili flakes (optional)
Instructions:
- Gather all ingredients and measuring tools. Use a spice grinder or mortar and pestle to finely grind the dried shiitake mushrooms.
- In a small mixing bowl, combine ground shiitake mushrooms, garlic powder, onion powder, sugar, ground ginger, white pepper, and sea salt.
- Stir in the soy sauce powder (or add liquid soy sauce later when cooking).
- Add black sesame seeds and optional chili flakes, mixing thoroughly.
- Transfer the seasoning blend to an airtight container and store in a cool, dark place (up to 6 months).
