Ingredients:

  • 1 lb (450 g) ground beef (or turkey)
  • 1 cup (150 g) cooked white rice
  • 1 medium onion, finely chopped (about 1 cup)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp (5 g) Worcestershire sauce
  • 1 tsp (5 g) dried thyme
  • 1 tsp (5 g) salt
  • ½ tsp (2 g) black pepper
  • ½ cup (80 g) breadcrumbs
  • ½ cup (120 ml) ketchup
  • 1 tbsp (15 ml) brown sugar
  • 1 tbsp (15 ml) apple cider vinegar

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Finely chop the onion and mince the garlic.
  3. In a large mixing bowl, combine ground beef, cooked rice, onion, garlic, egg, Worcestershire sauce, thyme, salt, pepper, and breadcrumbs.
  4. Mix until just combined. Avoid overmixing for best texture. Transfer mixture to a loaf pan and shape it into a loaf.
  5. In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar.
  6. Pour half of the glaze over the meatloaf.
  7. Place the meatloaf in the oven and bake for 50 minutes. Brush the remaining glaze on top halfway through.
  8. Use a meat thermometer to ensure the internal temperature reaches 160°F (70°C). If desired, let rest for 10 minutes before slicing.
