Ingredients:
- 1 lb (450 g) ground beef (or turkey)
- 1 cup (150 g) cooked white rice
- 1 medium onion, finely chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp (5 g) Worcestershire sauce
- 1 tsp (5 g) dried thyme
- 1 tsp (5 g) salt
- ½ tsp (2 g) black pepper
- ½ cup (80 g) breadcrumbs
- ½ cup (120 ml) ketchup
- 1 tbsp (15 ml) brown sugar
- 1 tbsp (15 ml) apple cider vinegar
Instructions:
- Preheat oven to 350°F (175°C).
- Finely chop the onion and mince the garlic.
- In a large mixing bowl, combine ground beef, cooked rice, onion, garlic, egg, Worcestershire sauce, thyme, salt, pepper, and breadcrumbs.
- Mix until just combined. Avoid overmixing for best texture. Transfer mixture to a loaf pan and shape it into a loaf.
- In a small bowl, mix together ketchup, brown sugar, and apple cider vinegar.
- Pour half of the glaze over the meatloaf.
- Place the meatloaf in the oven and bake for 50 minutes. Brush the remaining glaze on top halfway through.
- Use a meat thermometer to ensure the internal temperature reaches 160°F (70°C). If desired, let rest for 10 minutes before slicing.
