Ingredients:

  • 2 pounds (900g) baby potatoes, halved or quartered if large
  • 3 tablespoons (45ml) olive oil
  • 1 packet (1 ounce, 28g) ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and dry the baby potatoes. Cut them in half or quarters for even cooking.
  3. In a large mixing bowl, combine olive oil, ranch seasoning mix, garlic powder, onion powder, salt, and pepper.
  4. Add the potatoes to the bowl, tossing them until well-coated with the seasoning mixture.
  5. Arrange the seasoned potatoes in a single layer on the baking sheet.
  6. Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping halfway through, until golden brown and tender.
  7. Potatoes are done when a fork easily pierces them and they’re golden brown on the outside.
  8. Garnish with fresh parsley, if using, and serve warm.
