Ingredients:
- 2 pounds (900g) baby potatoes, halved or quartered if large
- 3 tablespoons (45ml) olive oil
- 1 packet (1 ounce, 28g) ranch seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Preheat the oven to 425°F (220°C).
- Wash and dry the baby potatoes. Cut them in half or quarters for even cooking.
- In a large mixing bowl, combine olive oil, ranch seasoning mix, garlic powder, onion powder, salt, and pepper.
- Add the potatoes to the bowl, tossing them until well-coated with the seasoning mixture.
- Arrange the seasoned potatoes in a single layer on the baking sheet.
- Place the baking sheet in the preheated oven and roast for 30-35 minutes, flipping halfway through, until golden brown and tender.
- Potatoes are done when a fork easily pierces them and they’re golden brown on the outside.
- Garnish with fresh parsley, if using, and serve warm.
