Ingredients:
- 4 tilapia fillets (approximately 6 oz or 170g each)
- 1 cup (140g) canned artichoke hearts, drained and chopped
- 1/2 cup (50g) grated Parmesan cheese
- 1/4 cup (60ml) mayonnaise (preferably full-fat)
- 1 tablespoon (15ml) lemon juice
- 1 teaspoon (5g) garlic powder
- 1 teaspoon (5g) onion powder
- Salt and pepper to taste
- 1 tablespoon (15ml) olive oil for greasing
- Chopped fresh parsley (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Lightly grease the baking dish with olive oil.
- In a mixing bowl, combine chopped artichoke hearts, Parmesan cheese, mayonnaise, lemon juice, garlic powder, onion powder, salt, and pepper.
- Arrange the tilapia fillets in the baking dish in a single layer.
- Spread the artichoke mixture evenly over the fillets.
- Bake in the preheated oven for 18-20 minutes, until the fish is cooked through and flakes easily with a fork.
- Remove from oven and sprinkle with chopped fresh parsley if desired.
- Allow to cool for a few minutes, then serve warm.
