Ingredients:

  • 4 tilapia fillets (approximately 6 oz or 170g each)
  • 1 cup (140g) canned artichoke hearts, drained and chopped
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (60ml) mayonnaise (preferably full-fat)
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) onion powder
  • Salt and pepper to taste
  • 1 tablespoon (15ml) olive oil for greasing
  • Chopped fresh parsley (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease the baking dish with olive oil.
  3. In a mixing bowl, combine chopped artichoke hearts, Parmesan cheese, mayonnaise, lemon juice, garlic powder, onion powder, salt, and pepper.
  4. Arrange the tilapia fillets in the baking dish in a single layer.
  5. Spread the artichoke mixture evenly over the fillets.
  6. Bake in the preheated oven for 18-20 minutes, until the fish is cooked through and flakes easily with a fork.
  7. Remove from oven and sprinkle with chopped fresh parsley if desired.
  8. Allow to cool for a few minutes, then serve warm.
