Ingredients:

  • 1 cup (200g) adzuki beans, rinsed and soaked overnight
  • 4 cups (960ml) water
  • 1/2 cup (100g) sugar (adjust to taste)
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1g) salt
  • 1/2 cup (120ml) coconut milk
  • Fresh mint leaves for garnish
  • Toasted coconut flakes for topping

Instructions:

  1. Soak adzuki beans overnight in water. Drain and rinse beans before cooking.
  2. In a medium pot, combine soaked beans and 4 cups of water. Bring to a boil, then reduce to a simmer. Cover loosely.
  3. Cook for 30-40 minutes until beans are tender. Check doneness; beans should be soft but not mushy.
  4. Stir in sugar, vanilla extract, and salt. Adjust sweetness as desired.
  5. Pour in coconut milk and stir well. Simmer for an additional 5-10 minutes.
  6. Ladle into bowls, garnish with mint and toasted coconut if desired, and enjoy warm.
