Ingredients:
- 1 cup (200g) adzuki beans, rinsed and soaked overnight
- 4 cups (960ml) water
- 1/2 cup (100g) sugar (adjust to taste)
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1g) salt
- 1/2 cup (120ml) coconut milk
- Fresh mint leaves for garnish
- Toasted coconut flakes for topping
Instructions:
- Soak adzuki beans overnight in water. Drain and rinse beans before cooking.
- In a medium pot, combine soaked beans and 4 cups of water. Bring to a boil, then reduce to a simmer. Cover loosely.
- Cook for 30-40 minutes until beans are tender. Check doneness; beans should be soft but not mushy.
- Stir in sugar, vanilla extract, and salt. Adjust sweetness as desired.
- Pour in coconut milk and stir well. Simmer for an additional 5-10 minutes.
- Ladle into bowls, garnish with mint and toasted coconut if desired, and enjoy warm.
