Ingredients:

  • 1 lb ground beef (80/20 mix)
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup onion, finely chopped
  • 1/4 cup bell pepper, finely chopped
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp mustard

Instructions:

  1. In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, onion, bell pepper, egg, garlic, Worcestershire sauce, salt, pepper, smoked paprika, and thyme. Mix until combined.
  2. Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
  3. Preheat the smoker to 225°F (107°C) and form the meat mixture into a loaf shape.
  4. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and mustard. Set aside.
  5. Place the meatloaf in the smoker. Smoke for approximately 2.5 to 3 hours, or until the internal temperature reaches 160°F (71°C). Baste with glaze during the last 30 minutes.
  6. Remove the meatloaf from the smoker and let it rest for 10-15 minutes before slicing.
