Ingredients:
- 1 lb ground beef (80/20 mix)
- 1 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup milk
- 1/4 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1 large egg
- 2 cloves garlic, minced
- 2 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 1 tsp mustard
Instructions:
- In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, milk, onion, bell pepper, egg, garlic, Worcestershire sauce, salt, pepper, smoked paprika, and thyme. Mix until combined.
- Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up.
- Preheat the smoker to 225°F (107°C) and form the meat mixture into a loaf shape.
- In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, and mustard. Set aside.
- Place the meatloaf in the smoker. Smoke for approximately 2.5 to 3 hours, or until the internal temperature reaches 160°F (71°C). Baste with glaze during the last 30 minutes.
- Remove the meatloaf from the smoker and let it rest for 10-15 minutes before slicing.
