Ingredients:

  • 1/2 cup (120g) light sour cream
  • 1 tbsp (15ml) fresh lemon juice
  • 1/2 tsp (2.5ml) lemon zest
  • 3 tbsp (15g) fresh dill
  • 1 clove (3g) garlic
  • 1/4 tsp (1.5g) sea salt
  • 1/8 tsp (0.5g) cracked black pepper
  • 1 tsp (5ml) water

Instructions:

  1. Finely chop the fresh dill until it is a consistent mince. Mince the garlic clove and sprinkle it with a pinch of salt, using the side of the knife to mash it into a smooth paste.
  2. In a medium mixing bowl, combine the light sour cream with the lemon juice and lemon zest. Whisk vigorously for 30–60 seconds until the sauce is uniform and glossy.
  3. Gently fold in the chopped dill, garlic paste, salt, and pepper using a spoon. If the sauce is too thick, whisk in water or additional lemon juice one teaspoon at a time until it reaches a velvety consistency.
  4. Optional: For a warm sauce, place the bowl over a pot of simmering water (double boiler) for 2–3 minutes, stirring constantly. Remove from heat once lukewarm to prevent curdling.
