Ingredients:
- 2 cups (250g) all-purpose flour
- 3/4 cup (75g) unsweetened cocoa powder
- 2 cups (400g) granulated sugar
- 2 tsp (10g) baking soda
- 1 tsp (5g) salt
- 2 large (100g) eggs, room temperature
- 1 cup (240g) full-fat sour cream
- 1/2 cup (120ml) vegetable oil
- 2 tsp (10ml) vanilla extract
- 1 cup (240ml) boiling water
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 can (354ml) evaporated milk
- 3 large (150g) egg yolks
- 2 cups (200g) sweetened shredded coconut
- 1 cup (115g) chopped pecans
- 1/4 tsp (1.5g) salt
Instructions:
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
- Add eggs, sour cream, vegetable oil, and vanilla extract. Beat on medium speed until fully incorporated.
- Stir in the boiling water by hand until the batter is smooth.
- Divide batter evenly between the two pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool cakes in pans for 10 minutes before transferring to a wire rack to cool completely for 2 hours.
- In a saucepan over medium heat, combine butter, sugar, evaporated milk, and salt. Bring to a simmer, stirring constantly.
- Slowly whisk in egg yolks to temper them. Reduce heat to low and simmer for 10-12 minutes until thickened.
- Remove from heat and fold in shredded coconut and chopped pecans. Let the frosting cool before assembling the cake.
