Ingredients:
- 1 (9-inch) pre-baked pie shell
- 1 tbsp all-purpose flour
- 3 cups firm pears, peeled and thinly sliced
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup full-fat sour cream
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1 tsp vanilla extract
- 1/2 tsp almond extract
Instructions:
- Preheat your oven to 350°F (175°C). Place your pre-baked pie shell in the oven and sprinkle 1 tablespoon of flour across the bottom of the crust to create a moisture barrier.
- Toss the sliced pears with 1/4 cup sugar, cinnamon, and salt in a bowl until evenly coated. Arrange the pears in the pie shell, overlapping them slightly.
- In a separate bowl, beat the sour cream, 1/2 cup sugar, 1/3 cup flour, vanilla, and almond extract until the mixture is completely smooth and glossy.
- Pour the sour cream mixture evenly over the pears, smoothing the top with a spatula.
- Bake for 35–45 minutes until the edges are set, the top is lightly golden, and the center has a slight jiggle.
- Remove from the oven and cool completely on a wire rack. Transfer to the refrigerator for at least 4 hours to allow the custard to firm up.
