Ingredients:

  • 2 cups whole milk
  • 1/4 cup heavy cream
  • 3 tbsp Dutch-processed cocoa powder
  • 3 tbsp granulated sugar
  • 2 oz bittersweet chocolate chips (60% cacao)
  • 1/2 tsp vanilla extract
  • 1 pinch sea salt
  • 2 oz Baileys Irish Cream
  • 1.5 oz Bourbon or Rye whiskey

Instructions:

  1. In a small heavy-bottomed saucepan, whisk together the cocoa powder, sugar, salt, and 2 tablespoons of the milk over medium-low heat until a smooth paste forms.
  2. Slowly pour in the remaining milk and heavy cream while whisking continuously. Add the bittersweet chocolate chips.
  3. Increase heat to medium, stirring until chocolate is melted and the liquid is steaming (approximately 160°F), but do not allow it to boil.
  4. Remove from heat. Stir in the vanilla extract, Baileys Irish Cream, and whiskey. Whisk vigorously for 30 seconds to create froth.
  5. Pour into warmed mugs and top with whipped cream or marshmallows.
