- 2 large eggs

- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon olive oil
- 1 cup fresh spinach, roughly chopped
- 1 ounce feta cheese, crumbled
- 1 slice whole-wheat bread
- 1/4 avocado, sliced
- 1 ounce smoked salmon
- Pinch of red pepper flakes (optional)
Instructions:
- Whisk together eggs, milk, salt, and pepper in a small bowl.
- Heat olive oil in the skillet over medium heat. Add spinach and cook until wilted.
- Pour egg mixture into the skillet with the spinach. Cook, stirring gently, until eggs are set but still slightly moist.
- Stir in crumbled feta cheese and cook for another minute, until slightly melted.
- While the eggs are cooking, toast the bread to your desired level of crispness.
- Top the toast with sliced avocado and smoked salmon.
- Spoon the spinach and feta scramble over the avocado toast. Sprinkle with red pepper flakes (optional) and serve immediately.
