Ingredients:

  • 2 large eggs
  • 1 tablespoon milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon olive oil
  • 1 cup fresh spinach, roughly chopped
  • 1 ounce feta cheese, crumbled
  • 1 slice whole-wheat bread
  • 1/4 avocado, sliced
  • 1 ounce smoked salmon
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Whisk together eggs, milk, salt, and pepper in a small bowl.
  2. Heat olive oil in the skillet over medium heat. Add spinach and cook until wilted.
  3. Pour egg mixture into the skillet with the spinach. Cook, stirring gently, until eggs are set but still slightly moist.
  4. Stir in crumbled feta cheese and cook for another minute, until slightly melted.
  5. While the eggs are cooking, toast the bread to your desired level of crispness.
  6. Top the toast with sliced avocado and smoked salmon.
  7. Spoon the spinach and feta scramble over the avocado toast. Sprinkle with red pepper flakes (optional) and serve immediately.
