Ingredients:

  • 1.25 lbs shaved beef ribeye
  • 1 large yellow onion, thinly sliced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp unsalted butter
  • 0.5 tsp salt
  • 0.5 tsp cracked black pepper
  • 1/4 cup mayonnaise
  • 1 tsp yellow mustard
  • 1/2 tsp lemon juice
  • 1/2 tsp dried dill weed
  • 1 pinch cayenne pepper
  • 4 large everything bagels, sliced
  • 8 large eggs
  • 1/4 cup whole milk
  • 8 slices American cheese
  • 2 tbsp unsalted butter

Instructions:

  1. In a small bowl, whisk together the mayonnaise, mustard, lemon juice, dill, and cayenne. Cover and refrigerate to allow the flavors to meld.
  2. Melt 1 tbsp of butter in a large skillet over medium-high heat. Add the sliced onions and cook until soft and golden brown, approximately 5–7 minutes. Move to the side of the pan.
  3. Add the shaved beef to the skillet. Season with salt, pepper, and Worcestershire sauce. Sear for 3–4 minutes, breaking the meat up until browned. Toss with the onions and remove from heat.
  4. Butter the cut sides of the bagels and toast on a griddle or in a toaster until golden brown and crisp.
  5. Whisk eggs with milk and salt. In a non-stick skillet over medium-low heat, cook a quarter of the mixture at a time. Fold edges into a square, top with two slices of cheese, and cover briefly to melt.
  6. Spread the prepared sauce on both sides of the toasted bagel. Layer the cheesy folded egg on the bottom half, pile the steak and onion mixture on top, and close the sandwich.
