Ingredients:
- 1.5 lb Prime T-Bone Steak (680g)
- 1 tsp Kosher Salt
- 1 tsp Coarse Black Pepper
- 4 tbsp Unsalted Butter (60g)
- 4 cloves Fresh Garlic, smashed
- 3 sprigs Fresh Thyme
- 1 sprig Fresh Rosemary
- 2 tbsp Avocado Oil (30ml)
Instructions:
- Pat the 680g T bone completely dry with paper towels. Season both sides generously with the kosher salt and coarse pepper. Let it sit at room temperature for at least 45 minutes.
- Heat your skillet over high heat until the 30ml of avocado oil is shimmering and just starting to wispy smoke.
- Cook for 3 to 4 minutes without moving the steak until a deep, dark mahogany crust forms. Flip the steak using your tongs. You should see a beautiful, even coloration across the entire surface.
- Immediately reduce the heat to medium. Add the 60g of unsalted butter, the 4 smashed garlic cloves, thyme sprigs, and the rosemary sprig.
- Tilt the pan slightly so the melting butter pools at the bottom with the aromatics. Use your large spoon to continuously pour the foaming butter over the steak.
- Continue basting for another 3 to 4 minutes. Check the internal temperature with your thermometer. For medium rare, you are looking for 52°C, as the temperature will rise during the rest.
- Remove the steak from the pan and place it on a warm plate or cutting board. Pour the remaining butter from the pan over it. Let it rest for at least 8 to 10 minutes until the juices have redistributed throughout the muscle fibers.
