Ingredients:

  • 1.5 pounds ground beef (80/20 for best flavor)
  • 1 cup Stove Top stuffing mix (chicken flavor)
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs, beaten
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup prepared Stove Top stuffing (after following package instructions)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup cooked and crumbled bacon (optional)
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar

Instructions:

  1. Follow package instructions to prepare 1 cup of Stove Top stuffing (allow to cool).
  2. In a frying pan, sauté chopped onion and minced garlic until translucent and fragrant. Set aside.
  3. In a mixing bowl, combine ground beef, cooked onion, garlic, beaten eggs, Worcestershire sauce, milk, stuffing mix, salt, and pepper.
  4. Divide the meat mixture in half and press the first half into the loaf pan, creating a hollow center for the filling.
  5. Mix the prepared stuffing, cheese, and bacon (if using) and spoon it into the center of the first meat layer.
  6. Cover the filling with the second half of the meat mixture, sealing the edges.
  7. Combine ketchup and brown sugar in a small bowl and spread it over the meatloaf.
  8. Preheat oven to 350°F (175°C). Bake meatloaf for 1 hour or until the internal temperature reaches 160°F (70°C).
  9. Let the meatloaf rest for 10-15 minutes before slicing and serving.
