Ingredients:

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 2 cups (300g) fresh blueberries
  • ¾ cup (150g) granulated sugar
  • 1 tablespoon (15g) lemon juice
  • 1 tablespoon (8g) cornstarch
  • 1 teaspoon cinnamon
  • 2 cups (240g) all-purpose flour
  • 1 tablespoon (15g) baking powder
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, cold and cubed
  • ¾ cup (150g) granulated sugar
  • 1 cup (240ml) milk

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine sliced peaches and blueberries.
  3. Add sugar, lemon juice, cornstarch, and cinnamon; toss to coat.
  4. Allow to sit for about 10 minutes to release juices.
  5. Transfer the fruit mixture to a greased baking dish.
  6. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  7. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  8. Stir in milk until just combined.
  9. Spread the topping over the fruit mixture evenly.
  10. Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the fruit is bubbly.
  11. Cool slightly before serving.
