Ingredients:
- 4 cups (600g) fresh peaches, peeled and sliced
- 2 cups (300g) fresh blueberries
- ¾ cup (150g) granulated sugar
- 1 tablespoon (15g) lemon juice
- 1 tablespoon (8g) cornstarch
- 1 teaspoon cinnamon
- 2 cups (240g) all-purpose flour
- 1 tablespoon (15g) baking powder
- ½ teaspoon salt
- ¾ cup (170g) unsalted butter, cold and cubed
- ¾ cup (150g) granulated sugar
- 1 cup (240ml) milk
Instructions:
- Preheat the oven to 375°F (190°C).
- In a bowl, combine sliced peaches and blueberries.
- Add sugar, lemon juice, cornstarch, and cinnamon; toss to coat.
- Allow to sit for about 10 minutes to release juices.
- Transfer the fruit mixture to a greased baking dish.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in milk until just combined.
- Spread the topping over the fruit mixture evenly.
- Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the fruit is bubbly.
- Cool slightly before serving.
