Ingredients:
- 4 cups cucumbers, thinly sliced
- 1 large onion, thinly sliced
- 1 cup white vinegar
- 1 cup granulated sugar
- 1 teaspoon mustard seeds
- 1 teaspoon celery seeds
- ½ teaspoon ground turmeric
- 1 teaspoon kosher salt
- ½ teaspoon black peppercorns
- ½ teaspoon red pepper flakes (optional)
Instructions:
- Wash and slice cucumbers and onion, placing them in a large mixing bowl.
- In a medium saucepan, combine vinegar, sugar, mustard seeds, celery seeds, turmeric, salt, black peppercorns, and red pepper flakes.
- Heat over medium until the sugar dissolves and the mixture just begins to boil.
- Pour the hot brine over the sliced cucumbers and onions in the mixing bowl.
- Let cool for about 10 minutes at room temperature.
- Transfer the cucumber mixture into sterilized jars, ensuring you include some of the brine and spices.
- Seal the jars and refrigerate for at least 1 hour before serving (best if left overnight).
- Enjoy as a condiment or side dish!
