Ingredients:

  • 4 cups cucumbers, thinly sliced
  • 1 large onion, thinly sliced
  • 1 cup white vinegar
  • 1 cup granulated sugar
  • 1 teaspoon mustard seeds
  • 1 teaspoon celery seeds
  • ½ teaspoon ground turmeric
  • 1 teaspoon kosher salt
  • ½ teaspoon black peppercorns
  • ½ teaspoon red pepper flakes (optional)

Instructions:

  1. Wash and slice cucumbers and onion, placing them in a large mixing bowl.
  2. In a medium saucepan, combine vinegar, sugar, mustard seeds, celery seeds, turmeric, salt, black peppercorns, and red pepper flakes.
  3. Heat over medium until the sugar dissolves and the mixture just begins to boil.
  4. Pour the hot brine over the sliced cucumbers and onions in the mixing bowl.
  5. Let cool for about 10 minutes at room temperature.
  6. Transfer the cucumber mixture into sterilized jars, ensuring you include some of the brine and spices.
  7. Seal the jars and refrigerate for at least 1 hour before serving (best if left overnight).
  8. Enjoy as a condiment or side dish!
