Ingredients:
- 12 oz (340 g) wide egg noodles
- 1 cup (240 ml) sour cream
- 1 cup (240 g) cottage cheese, drained
- 4 large eggs
- 1 cup (200 g) granulated sugar
- 1/2 cup (120 ml) unsalted butter, melted
- 1 tsp (5 g) vanilla extract
- 1 tsp (5 g) ground cinnamon
- 1/2 tsp (2 g) salt
- 1/2 cup (120 g) raisins or other dried fruits (optional)
- 1/4 cup (50 g) cornflakes, crushed (optional)
- 2 tbsp (30 g) unsalted butter, melted (for topping)
Instructions:
- Preheat the oven to 350°F (175°C).
- Boil a large pot of salted water, then add egg noodles and cook until just al dente, about 6-8 minutes.
- Drain noodles and rinse under cold water. Set aside to cool for about 10 minutes.
- In a large bowl, whisk together sour cream, cottage cheese, eggs, sugar, melted butter, vanilla extract, cinnamon, and salt until combined.
- Gently stir in the cooled noodles into the mixture. If using, fold in raisins.
- Grease the baking dish and pour noodle mixture into it evenly.
- In a small bowl, mix crushed cornflakes with melted butter and sprinkle over the kugel.
- Bake for 45 minutes or until the top is set and lightly golden.
- Allow kugel to cool for 10 minutes before slicing and serving.
