Ingredients:

  • 12 oz (340 g) wide egg noodles
  • 1 cup (240 ml) sour cream
  • 1 cup (240 g) cottage cheese, drained
  • 4 large eggs
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 ml) unsalted butter, melted
  • 1 tsp (5 g) vanilla extract
  • 1 tsp (5 g) ground cinnamon
  • 1/2 tsp (2 g) salt
  • 1/2 cup (120 g) raisins or other dried fruits (optional)
  • 1/4 cup (50 g) cornflakes, crushed (optional)
  • 2 tbsp (30 g) unsalted butter, melted (for topping)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Boil a large pot of salted water, then add egg noodles and cook until just al dente, about 6-8 minutes.
  3. Drain noodles and rinse under cold water. Set aside to cool for about 10 minutes.
  4. In a large bowl, whisk together sour cream, cottage cheese, eggs, sugar, melted butter, vanilla extract, cinnamon, and salt until combined.
  5. Gently stir in the cooled noodles into the mixture. If using, fold in raisins.
  6. Grease the baking dish and pour noodle mixture into it evenly.
  7. In a small bowl, mix crushed cornflakes with melted butter and sprinkle over the kugel.
  8. Bake for 45 minutes or until the top is set and lightly golden.
  9. Allow kugel to cool for 10 minutes before slicing and serving.
