Ingredients:

  • 1/2 cup (75 g) yellow mustard seeds
  • 1/4 cup (60 ml) white wine vinegar
  • 1/4 cup (60 ml) water
  • 1 tablespoon (15 g) sugar
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2 g) turmeric powder

Instructions:

  1. Combine mustard seeds, vinegar, and water in a medium mixing bowl. Let sit for at least 12 hours or overnight to soften the seeds.
  2. Transfer the soaked mustard mixture to a food processor or use an immersion blender. Add sugar, salt, and turmeric powder. Blend to a smooth or slightly coarse consistency.
  3. Taste and adjust with extra salt or sugar if needed.
  4. Transfer the mustard to a clean jar with a tight-fitting lid. Allow it to rest for an additional 12 hours at room temperature to develop flavor.
  5. Store in the refrigerator for up to 1 month.
