Ingredients:

  • 2 slices sourdough bread (about 1/2 inch thick)
  • 2 tablespoons unsalted butter, softened (28g, or 1 ounce)
  • 4 ounces (113g) Spam, sliced about 1/4 inch thick
  • 2 ounces (57g) sharp cheddar cheese, shredded or thinly sliced
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard

Instructions:

  1. Spread softened butter evenly on one side of each slice of bread.
  2. Heat a non-stick skillet or griddle over medium heat. Place the Spam slices in the skillet and cook for 2-3 minutes per side, or until golden brown and slightly crispy. Remove from skillet and set aside.
  3. In the same skillet, place the bread slices, butter-side down, and toast until golden brown and crisp. Remove one slice of bread to a plate with the toasted side facing up.
  4. Spread mayonnaise and mustard on the untoasted side of the remaining slice of bread.
  5. Top the toasted bread with the shredded cheese, then arrange the grilled Spam slices over the cheese. Top with the mayonnaise and mustard-covered bread slice, toasted-side up.
  6. Return the assembled sandwich to the skillet over medium-low heat. Cook for 2-3 minutes per side, or until the cheese is melted and gooey, and the bread is golden brown and crispy. Use a spatula to gently press down on the sandwich while cooking.
  7. Remove from skillet, slice in half (optional), and serve immediately.
