Ingredients:
- 2 slices sourdough bread (about 1/2 inch thick)
- 2 tablespoons unsalted butter, softened (28g, or 1 ounce)
- 4 ounces (113g) Spam, sliced about 1/4 inch thick
- 2 ounces (57g) sharp cheddar cheese, shredded or thinly sliced
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
Instructions:
- Spread softened butter evenly on one side of each slice of bread.
- Heat a non-stick skillet or griddle over medium heat. Place the Spam slices in the skillet and cook for 2-3 minutes per side, or until golden brown and slightly crispy. Remove from skillet and set aside.
- In the same skillet, place the bread slices, butter-side down, and toast until golden brown and crisp. Remove one slice of bread to a plate with the toasted side facing up.
- Spread mayonnaise and mustard on the untoasted side of the remaining slice of bread.
- Top the toasted bread with the shredded cheese, then arrange the grilled Spam slices over the cheese. Top with the mayonnaise and mustard-covered bread slice, toasted-side up.
- Return the assembled sandwich to the skillet over medium-low heat. Cook for 2-3 minutes per side, or until the cheese is melted and gooey, and the bread is golden brown and crispy. Use a spatula to gently press down on the sandwich while cooking.
- Remove from skillet, slice in half (optional), and serve immediately.
