Ingredients:
- 2 cups all-purpose flour (250g)
- 3/4 cup boiling water (180ml)
- 1/4 teaspoon salt (1g)
- 1 cup scallions, finely chopped (approximately 100g)
- 2 tablespoons sesame oil (30ml)
- 1/4 teaspoon salt (1g)
- 1/4 teaspoon white pepper (1g)
- 1/4 cup vegetable oil (60ml), for frying
Instructions:
- Combine flour and salt in a bowl.
- Stir in boiling water gradually, mix until a shaggy dough forms.
- Knead until smooth, cover with plastic wrap, and let it rest for 30 minutes.
- In a bowl, mix chopped scallions with sesame oil, salt, and white pepper.
- Divide rested dough into 4 equal pieces. Roll each piece into a thin circle (about 8 inches in diameter).
- Spread a thin layer of scallion mixture over the dough circle.
- Roll the dough into a tight log and then coil it into a spiral.
- Flatten gently with your palm, then roll again into a flat circle.
- Heat 2 tablespoons of vegetable oil in a non-stick skillet over medium heat.
- Fry each pancake for 3-4 minutes on each side or until golden brown and crispy.
- Slice into wedges and serve hot with your favorite dipping sauce.
