Ingredients:
- 1 lb ground pork, preferably with some fat (20% fat content)
- 100 g fresh breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tsp fresh thyme leaves, chopped
- 2 tsp fresh sage, chopped
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp allspice or nutmeg (optional)
- 2 tbsp fresh parsley, chopped
- 2-3 tbsp cold water (if needed for consistency)
- Sausage casings (if making links)
Instructions:
- In a large mixing bowl, combine the ground pork, breadcrumbs, chopped onion, minced garlic, thyme, sage, salt, black pepper, optional spices, and parsley.
- Mix thoroughly with your hands until well combined; if the mixture feels too dry, add cold water a tablespoon at a time.
- If using casings, rinse them and soak them in water. Stuff the casings with the sausage mixture using a sausage stuffer, twisting into desired link sizes.
- If not using casings, simply form the mixture into patties or links directly with your hands.
- Place the formed sausages on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes.
- Heat a frying pan over medium heat. Add sausage links and cook for 10-15 minutes, turning occasionally until golden brown and cooked through.
- Serve hot with your favorite sides or as part of a full Irish breakfast.
