Ingredients:
- 6 cups (500g) fresh broccoli florets, cut into small bite-sized pieces
- 8 oz (225g) thick-cut bacon, cooked crisp and crumbled
- 1 cup (115g) sharp cheddar cheese, cubed small
- 1/3 cup (50g) red onion, finely diced
- 1/2 cup (65g) sunflower seeds
- 1/2 cup (75g) dried cranberries
- 1 cup (230g) mayonnaise
- 1/4 cup (60ml) apple cider vinegar
- 1/3 cup (65g) granulated sugar
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
Instructions:
- Wash and thoroughly dry the broccoli. Cut the head into small, uniform florets.
- In a large mixing bowl, combine the broccoli florets, crumbled bacon, cubed cheddar, diced red onion, sunflower seeds, and dried cranberries.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until the sugar is fully dissolved and the mixture is smooth.
- Pour the dressing over the broccoli mixture and gently fold the ingredients together until evenly coated.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
