Ingredients:

  • 6 cups (500g) fresh broccoli florets, cut into small bite-sized pieces
  • 8 oz (225g) thick-cut bacon, cooked crisp and crumbled
  • 1 cup (115g) sharp cheddar cheese, cubed small
  • 1/3 cup (50g) red onion, finely diced
  • 1/2 cup (65g) sunflower seeds
  • 1/2 cup (75g) dried cranberries
  • 1 cup (230g) mayonnaise
  • 1/4 cup (60ml) apple cider vinegar
  • 1/3 cup (65g) granulated sugar
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Wash and thoroughly dry the broccoli. Cut the head into small, uniform florets.
  2. In a large mixing bowl, combine the broccoli florets, crumbled bacon, cubed cheddar, diced red onion, sunflower seeds, and dried cranberries.
  3. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until the sugar is fully dissolved and the mixture is smooth.
  4. Pour the dressing over the broccoli mixture and gently fold the ingredients together until evenly coated.
  5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
