Ingredients:
- 2 lbs (900g) frozen steak fries (ideally thick-cut)
- 2 tablespoons olive oil (30 ml)
- 1/4 cup (30g) grated Parmesan cheese, plus extra for serving
- 2 tablespoons truffle oil (30 ml)
- 1 tablespoon chopped fresh parsley (15 ml)
- 1 tablespoon chopped fresh chives (15 ml)
- Sea salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C) or prepare deep fryer according to manufacturer's instructions.
- Toss frozen steak fries with olive oil, salt, and pepper.
- If Baking: Spread fries in a single layer on the baking sheet. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy. If Frying: Fry fries in batches according to fryer instructions, until golden brown and crispy. Drain on paper towels.
- Immediately transfer the hot fries to the large bowl. Drizzle with truffle oil and toss gently to coat evenly.
- Sprinkle with grated Parmesan cheese, parsley, and chives. Toss gently to combine.
- Serve immediately, with extra Parmesan cheese if desired.
