Ingredients:

  • 1.5 lbs (680g) ground beef (80/20 blend)
  • 1 teaspoon (5ml) kosher salt
  • 1/2 teaspoon (2.5ml) black pepper
  • 4 brioche burger buns, toasted lightly
  • 4 slices cheddar cheese
  • 1/2 cup (approx. 115g) finely chopped white onion
  • 2 tablespoons (30ml) vegetable oil or clarified butter (ghee)

Instructions:

  1. Gently form the ground beef into 4 equal-sized balls. Avoid overworking the meat. Season generously with salt and pepper.
  2. Heat the cast iron skillet or griddle over medium-high heat until it's smoking slightly. Add the oil or clarified butter.
  3. Place a beef ball on the hot griddle. Immediately cover it with a square of parchment paper. Use a burger press or the bottom of a flat-bottomed saucepan to press down firmly and thinly to about 1/4 inch thickness. Hold for a few seconds.
  4. Cook the burger for 2-3 minutes, undisturbed, until a dark brown crust forms on the bottom. Use a thin, strong spatula to scrape underneath the patty, releasing it from the griddle. Flip the burger.
  5. Immediately place a slice of cheese on top of each patty.
  6. Add a tablespoon of water to the side of the pan away from the burger and cover it with a metal bowl to steam the cheese. Turn off the heat and cook for another minute.
  7. Place the cheeseburger on the toasted brioche bun. Top with chopped onion and any other desired toppings. Serve immediately and enjoy! This is how to make a smash burger.
