Ingredients:

  • 4 cups mixed salad greens (160g)
  • 1 cup cherry tomatoes, halved (150g)
  • ½ cucumber, sliced (100g)
  • ¼ red onion, thinly sliced (50g)
  • ¼ cup balsamic vinaigrette (60ml)
  • 1 loaf artisan bread (500g)
  • ½ cup unsalted butter, softened (113g)
  • 2 tablespoons fresh herbs, chopped (e.g., parsley or chives) (30g)
  • 1 clove garlic, minced (3g)
  • Salt, to taste
  • 1 cup strawberries, hulled (150g)
  • 1 cup blueberries (150g)
  • 2 kiwis, peeled and sliced (200g)
  • 1 tablespoon honey (15ml)

Instructions:

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, and red onion. Drizzle with balsamic vinaigrette and toss gently to combine.
  2. In a small bowl, mix softened butter with chopped herbs and minced garlic. Season with salt and spread the herb butter on slices of artisan bread. (Optional) Toast the bread in a preheated oven at 350°F (175°C) for 10-15 minutes until golden.
  3. On a large platter, arrange the strawberries, blueberries, and kiwi slices. Drizzle honey over the fruit or serve on the side as a dipping sauce.
