Ingredients:
- 1 cup (240 ml) water
- 1 cup (200 g) granulated sugar
- 1 piece of fresh ginger, about 2 inches long, sliced thinly
- 4 oz (120 ml) fresh lime juice (approximately 4-6 limes)
- 4 oz (120 ml) tequila (preferably blanco or reposado)
- 2 oz (60 ml) ginger syrup (made from the above)
- Ice, for shaking
- Lime wedges and candied ginger, for garnish (optional)
Instructions:
- Combine water, sugar, and sliced ginger in a saucepan.
- Bring to a boil, stirring until sugar dissolves.
- Reduce heat and let simmer for 10 minutes.
- Remove from heat and allow to cool.
- Strain if desired, removing ginger slices.
- Fill a cocktail shaker with ice.
- Add lime juice, tequila, and ginger syrup to the shaker.
- Shake well until chilled (about 15 seconds).
- Strain mixture into glasses filled with ice.
- Optional: garnish with lime wedges and candied ginger.
- Serve immediately and enjoy!
