Ingredients:
- ½ cup (120ml) extra virgin olive oil
- ¼ cup (60ml) red wine vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- 1 tablespoon honey (or maple syrup for a vegan option)
- 2 tablespoons fresh herbs (e.g., parsley, basil, or chives), finely chopped
- Salt, to taste
- Pepper, to taste
Instructions:
- In a medium bowl or jar, add the red wine vinegar, Dijon mustard, minced garlic, and honey.
- Using a whisk or fork, mix the ingredients until well combined.
- Slowly drizzle in the olive oil while whisking continuously (or add the oil and shake if using a jar).
- Stir in the chopped herbs, and season with salt and pepper to taste.
- Taste the vinaigrette and adjust seasoning or acidity as needed.
- If not using immediately, transfer to an airtight container and refrigerate for up to one week. Shake well before use.
