Ingredients:

  • ½ cup (120ml) extra virgin olive oil
  • ¼ cup (60ml) red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 2 tablespoons fresh herbs (e.g., parsley, basil, or chives), finely chopped
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. In a medium bowl or jar, add the red wine vinegar, Dijon mustard, minced garlic, and honey.
  2. Using a whisk or fork, mix the ingredients until well combined.
  3. Slowly drizzle in the olive oil while whisking continuously (or add the oil and shake if using a jar).
  4. Stir in the chopped herbs, and season with salt and pepper to taste.
  5. Taste the vinaigrette and adjust seasoning or acidity as needed.
  6. If not using immediately, transfer to an airtight container and refrigerate for up to one week. Shake well before use.
