Ingredients:

  • 8 medium tomatillos, husked and rinsed
  • 1 small onion, quartered
  • 2 cloves garlic, peeled
  • 1-2 fresh jalapeños, stemmed
  • ½ cup fresh cilantro leaves, packed
  • Juice of 1 lime
  • Salt, to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Arrange tomatillos, onion, and garlic on a baking sheet.
  3. Roast in the oven for about 10 minutes until charred and soft.
  4. Allow to cool slightly; then transfer to a blender or food processor.
  5. Add jalapeños, cilantro, lime juice, and salt to the mixture in the blender.
  6. Blend until smooth or desired consistency is reached, scraping down sides as needed.
  7. Taste and adjust seasoning if necessary.
  8. Serve immediately or chill in the refrigerator before serving.
