Ingredients:
- 8 medium tomatillos, husked and rinsed
- 1 small onion, quartered
- 2 cloves garlic, peeled
- 1-2 fresh jalapeños, stemmed
- ½ cup fresh cilantro leaves, packed
- Juice of 1 lime
- Salt, to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- Arrange tomatillos, onion, and garlic on a baking sheet.
- Roast in the oven for about 10 minutes until charred and soft.
- Allow to cool slightly; then transfer to a blender or food processor.
- Add jalapeños, cilantro, lime juice, and salt to the mixture in the blender.
- Blend until smooth or desired consistency is reached, scraping down sides as needed.
- Taste and adjust seasoning if necessary.
- Serve immediately or chill in the refrigerator before serving.
