Ingredients:

  • 1 lb Fresh Green Okra Pods
  • 1 cup Low-fat Buttermilk
  • 1 tsp Louisiana-style Hot Sauce (e.g., Tabasco)
  • 1 cup Medium-Grind Yellow Cornmeal
  • 1/2 cup All-Purpose Flour
  • 1 tsp Fine Sea Salt
  • 1/2 tsp Freshly Ground Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • High-Heat Cooking Spray (e.g., Avocado or Grapeseed oil), As needed

Instructions:

  1. Prepare the Okra: Wash the okra thoroughly and pat it very dry with a clean kitchen towel. Trim off the stem ends and slice the okra into 1/2-inch (1.2 cm) thick rounds. Place in a large bowl.
  2. Set Up Wet Mix: In a medium bowl, whisk together the buttermilk and hot sauce until combined.
  3. Set Up Dry Dredge: In a second large bowl, whisk together the cornmeal, flour, salt, pepper, garlic powder, and smoked paprika. Ensure the spices are evenly distributed.
  4. Dredge (The Wet Stage): Add the sliced okra to the buttermilk mixture. Toss gently to coat every piece. Shake off excess liquid before moving to the dry dredge.
  5. Dredge (The Dry Stage): Transfer the wet okra to the cornmeal mixture. Using your hands or a slotted spoon, toss thoroughly until every piece is completely coated. Gently press the coating onto the okra.
  6. Rest the Coating (Mandatory Step): Spread the coated okra in a single layer on a sheet pan or a wire rack. Allow the okra to rest for 15 minutes. This crucial waiting period allows the coating to hydrate and adhere, preventing it from flaking off in the air fryer.
  7. Preheat: Preheat the air fryer to 380°F (195°C) for 3–5 minutes.
  8. Load the Basket: Working in batches (do not overcrowd!), place a single, even layer of the coated okra in the air fryer basket.
  9. Apply Oil: Liberally spray the top layer of okra with high-heat cooking oil spray. This is essential for achieving a golden colour and maximum crunch.
  10. Initial Cook: Air fry the okra for 6 minutes.
  11. Shake and Finish: Pull out the basket, give it a good shake to redistribute the pieces, spray again lightly if necessary, and continue to cook for another 4–6 minutes, or until the okra is deep golden brown and exceptionally crispy.
  12. Serve Hot: Immediately remove the okra from the air fryer and season lightly with an extra pinch of salt if desired. Repeat steps 8-11 with the remaining batches.
