Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line the sheet cake pan with parchment paper.
  3. In a medium bowl, sift together the flour, baking powder, baking soda, and salt; set aside.
  4. In a large bowl, cream the softened butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Mix in the kefir, vanilla extract, and lemon zest until combined.

  10. While the cake bakes, prepare the lemon glaze by whisking together powdered sugar, lemon juice, and zest.
  11. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. Drizzle the zesty lemon glaze over the cooled cake before slicing and serving.
