Ingredients:
- 1 tablespoon olive oil
- 6 slices bacon, cut into ½-inch pieces
- 1 medium yellow onion, thinly sliced
- 1 medium head green cabbage, cored and shredded
- 2 cloves garlic, minced
- ¼ cup chicken broth
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: Red pepper flakes, to taste
Instructions:
- In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon grease in the skillet.
- Add the sliced onion to the skillet with the bacon grease and cook until softened and translucent, about 5-7 minutes.
- Add the shredded cabbage and minced garlic to the skillet. Sauté until the cabbage begins to soften and slightly brown, about 10-12 minutes, stirring occasionally.
- Pour in the chicken broth and apple cider vinegar. Stir in the brown sugar, salt, and pepper. Bring to a simmer, then cover the skillet and reduce heat to low. Cook for another 5-7 minutes, or until the cabbage is tender-crisp.
- Stir in the cooked bacon. Taste and adjust seasonings as needed. Serve hot.
