Ingredients:

  • 1 tablespoon olive oil
  • 6 slices bacon, cut into ½-inch pieces
  • 1 medium yellow onion, thinly sliced
  • 1 medium head green cabbage, cored and shredded
  • 2 cloves garlic, minced
  • ¼ cup chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: Red pepper flakes, to taste

Instructions:

  1. In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon with a slotted spoon and set aside, reserving the bacon grease in the skillet.
  2. Add the sliced onion to the skillet with the bacon grease and cook until softened and translucent, about 5-7 minutes.
  3. Add the shredded cabbage and minced garlic to the skillet. Sauté until the cabbage begins to soften and slightly brown, about 10-12 minutes, stirring occasionally.
  4. Pour in the chicken broth and apple cider vinegar. Stir in the brown sugar, salt, and pepper. Bring to a simmer, then cover the skillet and reduce heat to low. Cook for another 5-7 minutes, or until the cabbage is tender-crisp.
  5. Stir in the cooked bacon. Taste and adjust seasonings as needed. Serve hot.
