Ingredients:

  • 2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry (560g)
  • 1 medium yellow onion, finely chopped (approx. 1 cup) (150g)
  • 2 cloves garlic, minced
  • 2 tablespoons butter, unsalted (28g)
  • 8 ounces cream cheese, softened (225g)
  • 1/2 cup sour cream (120ml)
  • 1/4 cup milk (60ml)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 cup shredded cheddar cheese (115g)
  • 1/2 cup grated parmesan cheese (50g)
  • 1/2 cup crushed Ritz crackers (or similar buttery crackers) (30g)
  • 2 tablespoons butter, melted (28g)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Stir in the squeezed dry spinach, cream cheese, sour cream, milk, salt, pepper, and nutmeg (if using) into the skillet. Mix well until everything is combined.
  4. In a separate bowl, combine cheddar cheese, parmesan cheese, crushed Ritz crackers, and melted butter. Toss to combine.
  5. Pour the spinach mixture into the prepared baking dish. Spread evenly.
  6. Sprinkle the cheese and cracker topping evenly over the spinach mixture.
  7. Bake in the preheated oven for 25-30 minutes, or until golden brown and bubbly.
  8. Let stand for a few minutes before serving. This helps it set up a bit.
