Ingredients:
- 2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry (560g)
- 1 medium yellow onion, finely chopped (approx. 1 cup) (150g)
- 2 cloves garlic, minced
- 2 tablespoons butter, unsalted (28g)
- 8 ounces cream cheese, softened (225g)
- 1/2 cup sour cream (120ml)
- 1/4 cup milk (60ml)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg (optional)
- 1 cup shredded cheddar cheese (115g)
- 1/2 cup grated parmesan cheese (50g)
- 1/2 cup crushed Ritz crackers (or similar buttery crackers) (30g)
- 2 tablespoons butter, melted (28g)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Melt butter in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- Stir in the squeezed dry spinach, cream cheese, sour cream, milk, salt, pepper, and nutmeg (if using) into the skillet. Mix well until everything is combined.
- In a separate bowl, combine cheddar cheese, parmesan cheese, crushed Ritz crackers, and melted butter. Toss to combine.
- Pour the spinach mixture into the prepared baking dish. Spread evenly.
- Sprinkle the cheese and cracker topping evenly over the spinach mixture.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and bubbly.
- Let stand for a few minutes before serving. This helps it set up a bit.
