Ingredients:

  • 1 cup quinoa (170g), rinsed
  • 2 cups water (480ml)
  • Pinch of salt (optional)
  • 1 cup mixed berries (strawberries, blueberries, raspberries - 150g)
  • 1 ripe banana, sliced
  • 1/4 cup nuts (almonds or walnuts - 30g), chopped
  • 2 tablespoons maple syrup (30ml) (optional)
  • 1 tablespoon chia seeds (10g) (optional)
  • 1/4 teaspoon cinnamon (optional)

Instructions:

  1. Rinse quinoa under cold water in a fine-mesh strainer to remove bitterness.
  2. In a medium saucepan, combine rinsed quinoa, water, and a pinch of salt. Bring to a boil over medium-high heat, then reduce to low, cover, and simmer for 15 minutes until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.
  3. Fluff the cooked quinoa with a fork to separate the grains.
  4. While the quinoa cooks, slice the banana and gather the mixed berries and nuts in a mixing bowl.
  5. Divide the fluffed quinoa into two bowls. Top each bowl with the prepared fruits, chopped nuts, and optional toppings like chia seeds, maple syrup, and cinnamon.
  6. Serve immediately and enjoy your nutritious breakfast bowl!
