Ingredients:
- 2 cups all-purpose flour (240g)
- 1 cup whole wheat flour (120g)
- 2 teaspoons instant yeast (8g)
- 1 teaspoon salt (6g)
- 1 tablespoon olive oil (15ml)
- 1 cup warm water (240ml)
Instructions:
- In a large mixing bowl, whisk together all-purpose flour, whole wheat flour, yeast, and salt.
- In a separate bowl, mix warm water and olive oil.
- Gradually add the wet mixture to the dry ingredients, stirring until a shaggy dough forms.
- Transfer the dough to a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for about 1 hour until doubled in size.
- Once the dough has risen, punch it down and divide it into six equal portions. Shape each portion into a ball, then roll out into circles about ¼ inch thick.
- Heat the skillet over medium-high heat. Cook each pita for 1-2 minutes on each side until puffed and lightly browned.
- Remove the cooked pitas from the skillet and wrap them in a kitchen towel to keep them warm and soft.
