Ingredients:

  • 12 cups water
  • 1 (3 ounce) package crab boil seasoning (such as Zatarain's)
  • 1/4 cup Cajun seasoning (such as Tony Chachere's)
  • 2 tablespoons salt
  • 1 lemon, quartered
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 pounds small red potatoes
  • 2 pounds smoked sausage, such as andouille or kielbasa, cut into 2-inch pieces
  • 6 ears corn, shucked and cut in half
  • 2 pounds large shrimp, peeled and deveined
  • Fresh parsley, chopped (optional)
  • Lemon wedges (optional)

Instructions:

  1. In a large stockpot, combine water, crab boil seasoning, Cajun seasoning, salt, lemon quarters, onion quarters, and minced garlic. Bring to a rolling boil over high heat.
  2. Add the red potatoes to the boiling water. Cook for 10-12 minutes, or until slightly tender.
  3. Add the smoked sausage and corn to the pot. Cook for another 5-7 minutes.
  4. Add the shrimp to the pot. Cook for 3-5 minutes, or until the shrimp turn pink and opaque.
  5. Carefully drain the shrimp boil in a colander. Transfer the contents to a large platter or newspaper-lined table. Garnish with fresh parsley and lemon wedges, if desired. Serve immediately.
