Ingredients:
- 12 cups water
- 1 (3 ounce) package crab boil seasoning (such as Zatarain's)
- 1/4 cup Cajun seasoning (such as Tony Chachere's)
- 2 tablespoons salt
- 1 lemon, quartered
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 pounds small red potatoes
- 2 pounds smoked sausage, such as andouille or kielbasa, cut into 2-inch pieces
- 6 ears corn, shucked and cut in half
- 2 pounds large shrimp, peeled and deveined
- Fresh parsley, chopped (optional)
- Lemon wedges (optional)
Instructions:
- In a large stockpot, combine water, crab boil seasoning, Cajun seasoning, salt, lemon quarters, onion quarters, and minced garlic. Bring to a rolling boil over high heat.
- Add the red potatoes to the boiling water. Cook for 10-12 minutes, or until slightly tender.
- Add the smoked sausage and corn to the pot. Cook for another 5-7 minutes.
- Add the shrimp to the pot. Cook for 3-5 minutes, or until the shrimp turn pink and opaque.
- Carefully drain the shrimp boil in a colander. Transfer the contents to a large platter or newspaper-lined table. Garnish with fresh parsley and lemon wedges, if desired. Serve immediately.
