Ingredients:

  • 1 ½ cups (192g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • ½ cup (120ml) vegetable oil
  • ¼ cup (60ml) milk
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ¾ cup (130g) semi-sweet chocolate chips
  • 1-2 tablespoons additional semi-sweet chocolate chips (optional)

Instructions:

  1. Preheat oven to 375°F (190°C, Gas Mark 5). Line a mini muffin tin with paper liners or grease well.
  2. Whisk together flour, baking soda, baking powder, and salt in a medium bowl.
  3. In a large bowl, whisk together granulated sugar, brown sugar, oil, milk, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  5. Gently fold in the chocolate chips.
  6. Fill each mini muffin cup about ¾ full with batter. Use a cookie scoop or spoon for even portions.
  7. Sprinkle additional chocolate chips on top of each muffin (optional).
  8. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean (or with a few melted chocolate chip smudges!).
  9. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. These chocolate chip mini muffins are now ready to enjoy!
