Ingredients:
- 1 ½ cups (192g) all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (100g) granulated sugar
- ¼ cup (50g) packed light brown sugar
- ½ cup (120ml) vegetable oil
- ¼ cup (60ml) milk
- 1 large egg
- 2 teaspoons vanilla extract
- ¾ cup (130g) semi-sweet chocolate chips
- 1-2 tablespoons additional semi-sweet chocolate chips (optional)
Instructions:
- Preheat oven to 375°F (190°C, Gas Mark 5). Line a mini muffin tin with paper liners or grease well.
- Whisk together flour, baking soda, baking powder, and salt in a medium bowl.
- In a large bowl, whisk together granulated sugar, brown sugar, oil, milk, egg, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Gently fold in the chocolate chips.
- Fill each mini muffin cup about ¾ full with batter. Use a cookie scoop or spoon for even portions.
- Sprinkle additional chocolate chips on top of each muffin (optional).
- Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean (or with a few melted chocolate chip smudges!).
- Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. These chocolate chip mini muffins are now ready to enjoy!
