Ingredients:

  • 1 pound (450g) pre-made pizza dough
  • 2 tablespoons olive oil
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 large egg, beaten
  • 1 cup (240ml) marinara sauce
  • 2 cups (225g) shredded mozzarella cheese
  • ½ cup (75g) pepperoni slices, quartered
  • ¼ cup (40g) chopped green bell pepper
  • ¼ cup (40g) chopped red onion
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper. Roll out pizza dough on a lightly floured surface.
  2. Using a bowl or large cookie cutter, cut out 12 circles of dough.
  3. Place 6 dough circles on the prepared baking sheet. Brush the edges with olive oil.
  4. In a mixing bowl, combine marinara sauce, mozzarella, pepperoni, green pepper, and red onion. Season with salt and pepper. Spoon a generous amount of filling onto each dough circle.
  5. Top with the remaining dough circles. Crimp the edges with a fork to seal.
  6. Brush the tops of the pockets with egg wash. Sprinkle with Parmesan cheese and Italian seasoning.
  7. Bake for 15-20 minutes, or until golden brown. Let cool slightly before serving.
