Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 large onion, thinly sliced (about 1 cup sliced) (200g)
- 2 bell peppers (any color or combination), thinly sliced (about 2 cups sliced) (300g)
- 1 pound Italian sausage (sweet, hot, or a mix), (450g)
- 1 teaspoon dried oregano (5 ml)
- 1/2 teaspoon garlic powder (2.5 ml)
- Salt and black pepper to taste
- Optional: 1/4 teaspoon red pepper flakes (1.25 ml), for extra heat
- 4 hoagie rolls, Italian rolls, or similar (approximately 6-8 inches/15-20 cm long)
- Optional: Mustard, ketchup, or marinara sauce
Instructions:
- Slice the onion and bell peppers into thin strips. Set aside.
- Heat the olive oil in a large skillet over medium heat. Add the onions and cook until softened and slightly caramelized, about 8-10 minutes. Add the bell peppers and continue to cook until tender, about 5-7 minutes more. Season with salt and pepper. Remove the vegetables from the skillet and set aside.
- Add the Italian sausage to the skillet. Cook over medium heat, breaking it apart with a spoon, until browned and cooked through, about 8-10 minutes. Drain any excess grease. If using whole sausage links, cook them until browned on all sides and the internal temperature reaches 165°F (74°C), then slice.
- Return the cooked vegetables to the skillet with the sausage. Add the dried oregano, garlic powder, and red pepper flakes (if using). Stir to combine and heat through, about 2-3 minutes. Taste and adjust seasoning as needed.
- Warm the hoagie rolls (optional). Fill each roll with the sausage, peppers, and onions mixture. Serve immediately with your favorite condiments. Enjoy this classic sausage peppers and onions recipe!
