Ingredients:
- 250g (2 cups) all-purpose flour, plus more for dusting the pan
- 10g (2 teaspoons) baking powder
- 1/2 teaspoon salt
- 115g (1/2 cup, 1 stick) unsalted butter, softened, plus more for greasing the pan
- 200g (1 cup) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 240ml (1 cup) whole milk
Instructions:
- Grease and flour a 9-inch round cake pan. Optionally, line the bottom with parchment paper for easy release.
- In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3-5 minutes).
- Beat in the eggs, one at a time, followed by the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix!
- Pour the batter into the prepared cake pan and spread evenly.
- Bake in a preheated oven at 175°C (350°F) for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
