Ingredients:

  • 250g (2 cups) all-purpose flour, plus more for dusting the pan
  • 10g (2 teaspoons) baking powder
  • 1/2 teaspoon salt
  • 115g (1/2 cup, 1 stick) unsalted butter, softened, plus more for greasing the pan
  • 200g (1 cup) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 240ml (1 cup) whole milk

Instructions:

  1. Grease and flour a 9-inch round cake pan. Optionally, line the bottom with parchment paper for easy release.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3-5 minutes).
  3. Beat in the eggs, one at a time, followed by the vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Be careful not to overmix!
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake in a preheated oven at 175°C (350°F) for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
