  • 1/4 cup (60 ml) olive oil or melted coconut oil
  • 2 tablespoons honey or maple syrup (optional, for a touch of sweetness)
  • 1 teaspoon apple cider vinegar
  • 1/2 cup (120 ml) warm water

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 8.5 x 4.5 inch loaf pan with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, whisk together almond flour, baking powder, salt, and psyllium husk powder (if using). Ensure all dry ingredients are evenly distributed.
  3. In a separate bowl, whisk together eggs, oil, sweetener (if using), apple cider vinegar, and warm water.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan, spreading evenly.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Cooling completely before slicing is important to prevent the bread from falling apart.
