- 4 large eggs
- 1/4 cup (60 ml) olive oil or melted coconut oil
- 2 tablespoons honey or maple syrup (optional, for a touch of sweetness)
- 1 teaspoon apple cider vinegar
- 1/2 cup (120 ml) warm water
Instructions:
- Preheat oven to 350°F (175°C). Line a 8.5 x 4.5 inch loaf pan with parchment paper, leaving an overhang on the sides.
- In a large mixing bowl, whisk together almond flour, baking powder, salt, and psyllium husk powder (if using). Ensure all dry ingredients are evenly distributed.
- In a separate bowl, whisk together eggs, oil, sweetener (if using), apple cider vinegar, and warm water.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan, spreading evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
