Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) honey
  • 1/4 cup (50g) brown sugar, packed
  • 1 large egg, room temperature
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) ground ginger
  • 1/4 tsp (0.5g) ground cloves
  • 1/4 tsp (0.5g) ground nutmeg

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, beat the softened butter, honey, and brown sugar until the mixture is smooth and pale.
  3. Add the egg and beat again until fully incorporated.
  4. Stir in the ground cinnamon, ginger, cloves, and nutmeg, ensuring the spices are evenly distributed in the wet base.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the flour mixture to the honey base, stirring gently with a spatula until a soft, tacky dough forms; do not overmix.
  7. Line a baking sheet with parchment paper.
  8. Using a cookie scoop, drop rounded tablespoons of dough onto the sheet, spacing them 2 inches apart.
  9. Bake for 12–15 minutes until the edges are slightly golden but the centers still look soft.
  10. Remove from oven and let cool on a wire rack.
