Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 1/2 cup (100g) honey
- 1/4 cup (50g) brown sugar, packed
- 1 large egg, room temperature
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground cloves
- 1/4 tsp (0.5g) ground nutmeg
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, beat the softened butter, honey, and brown sugar until the mixture is smooth and pale.
- Add the egg and beat again until fully incorporated.
- Stir in the ground cinnamon, ginger, cloves, and nutmeg, ensuring the spices are evenly distributed in the wet base.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the flour mixture to the honey base, stirring gently with a spatula until a soft, tacky dough forms; do not overmix.
- Line a baking sheet with parchment paper.
- Using a cookie scoop, drop rounded tablespoons of dough onto the sheet, spacing them 2 inches apart.
- Bake for 12–15 minutes until the edges are slightly golden but the centers still look soft.
- Remove from oven and let cool on a wire rack.
