Ingredients:
- 4 large eggs
- 1/2 cup (120ml) heavy cream
- 1/2 cup (50g) grated cheddar cheese
- 1/4 cup (30g) grated parmesan cheese
- 1/2 teaspoon salt (2.5g)
- 1/4 teaspoon black pepper (1g)
- 1/2 teaspoon smoked paprika (2g)
- 1/2 cup (75g) diced bell pepper
- 1/2 cup (75g) chopped spinach (or kale)
- 1/4 cup (35g) chopped onion
- 1 clove garlic, minced (optional)
- Fresh herbs (like parsley or chives) for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- Grease each ramekin lightly with butter or cooking spray.
- In a mixing bowl, whisk together the heavy cream, salt, pepper, and smoked paprika.
- Evenly distribute the diced bell pepper, spinach, onion, and garlic (if using) into each ramekin.
- Crack an egg into each ramekin on top of the vegetables.
- Spoon the cream mixture over the eggs, then sprinkle the cheeses evenly on top.
- Place all ramekins in a baking dish, and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Bake for about 20 minutes, or until the egg whites are set but the yolks remain slightly runny.
- Remove from the oven and cool for a few minutes. Garnish with fresh herbs before serving.
