Ingredients:

  • 4 large eggs
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (50g) grated cheddar cheese
  • 1/4 cup (30g) grated parmesan cheese
  • 1/2 teaspoon salt (2.5g)
  • 1/4 teaspoon black pepper (1g)
  • 1/2 teaspoon smoked paprika (2g)
  • 1/2 cup (75g) diced bell pepper
  • 1/2 cup (75g) chopped spinach (or kale)
  • 1/4 cup (35g) chopped onion
  • 1 clove garlic, minced (optional)
  • Fresh herbs (like parsley or chives) for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Grease each ramekin lightly with butter or cooking spray.
  3. In a mixing bowl, whisk together the heavy cream, salt, pepper, and smoked paprika.
  4. Evenly distribute the diced bell pepper, spinach, onion, and garlic (if using) into each ramekin.
  5. Crack an egg into each ramekin on top of the vegetables.
  6. Spoon the cream mixture over the eggs, then sprinkle the cheeses evenly on top.
  7. Place all ramekins in a baking dish, and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
  8. Bake for about 20 minutes, or until the egg whites are set but the yolks remain slightly runny.
  9. Remove from the oven and cool for a few minutes. Garnish with fresh herbs before serving.
